4 oz chicken breast, cooked
1/2 c. non fat cottage cheese
2 tbsp Dijon mustard
1/4 c. water
pepper to taste
1/2 cup diced celery
2 slices Ezekiel Bread
Romain Lettuce
chop and set aside celery. Take cooked chicken (I like to cook my chicken in the crock pot for this dish, as it make it very juicy and just falls apart), non fat cottage cheese, Dijon Mustard pepper, and water and place in blender or food processor. Add chicken mix to bowl of celery and mix. Add chicken mixture on top of Ezekiel bread and top off with Romaine lettuce and Enjoy!
– You can also add to a big salad, if you don’t want to use the bread.
