3 cups diced cooked chicken
1.5 cup chopped celery
1 large fuji or pink lady apple, chopped
1/2 cup chopped onion
1/2 cup low-fat cottage cheese
1 tbsp olive oil
pepper
Mix chicken, celery, apple, and onions in large mixing bowl. In a blender mix cottage cheese olive oil. Blend for 2 minutes on the “whip” speed. Add to chicken mixture and mix thoroughly . Add Pepper to taste. Serve on lettuce or on Ezekiel Bread! Delicious!
