Ingredients –
1/2 cup Cooked brown rice
non stick cooking spray
1/2 medium Yellow Onion, sliced
4 Scallions, sliced
1 cup Fresh Bean Sprouts
1 tablespoon Low-Sodium Soy Sauce
2 packets no calorie sweetener
Fresh Ground Black Pepper, to taste
3 cloves garlic
2-inch piece fresh ginger, peeled and finely chopped
1/4 c. green onions
1/2 c. diced mushrooms
6 large egg whites, lightly beaten
Preparation:
1. Prepare vegetables by dicing and slicing and place in large bowl.
2. In a small bowl combine soy sauce and sweetener.
3. Heat wok over high heat. Spray with non stick cooking spray.
4. When wok is hot, add veggies and Stir-fry until thoroughly cooked.
5. add egg whites and remaining ingredients (ginger, pepper, brown rice) and continue stir frying until egg whites are cooked.
6. Fold in soy sauce mixture and Stir-fry 3 minutes.
