3 tbsp smart balance butter
1 tbsp brown sugar
1 cup splenda
2 egg whites
1 cup old fashion oats
3/4 c. oat flour
3/4 cup vanilla protein powder
1 tsp baking powder
3/4 tsp baking soda
2 tsp cinnamon
3/4 c. non fat milk
2 tsp vanilla

-Preheat oven to 350F. Spray standard muffin tin with nonstick cooking spray.

-In a large bowl, with an electric mixer, cream margarine and brown sugar until light and creamy. Beat in splenda. Beat in egg whites and set aside.

-in a med bowl, combine oats, flour, protein, baking powder and soda, cinnamon and vanilla. Using a large spoon or spatula, lightly stir 1/2 of the flour mixture into creamed mixture. Stir in 1/2 of the milk. Repeat with the rest, stirring until blended.

-Spoon batter into prepared muffin tin tins.

-Sprinkle splenda on top of muffins and back for 20 minutes or until center springs back when lightly touched. Cool for 5 minutes before removing to a wire rack.
