Ingredients:

  • 1/2 cup precooked brown rice
  • 1/2 cup water
  • 3/4 scoop vanilla protein powder
  • 1/4 c. non fat cottage cheese
  • 1 dash ground cinnamon
  • 1 dash ground nutmeg
  • 1/4 tsp. vanilla extract
  • 2 Splenda packets or another sugar substitute like Stevia
  • 1 small apple, sliced

Directions:

  1. Mix cooked brown rice with water. Add vanilla and Cook over medium-low heat for 15-20, until begins to thicken.  Once thickened, remove from heat and place in bowl.  Allow to cool for about 5 minutes.
  2. In a separate bowl, mix  non fat cottage cheese and protein powder and  Mix well until there are no clumps.
  3. Add cottage cheese mix to rice mixture and mix well.
  4. In separate pan, saute sliced apples with cinnamon, nutmeg and sugar substitute such as stevia .  Cook until begin to brown.  Remove from heat and place over brown rice/ cottage cheese mixture.
