INGREDIENTS:
2 tomatoes, seeded and finely chopped
1 cup chopped green onions (about 8)
2 cups chopped flat leaf parsley –WITH OR WITHOUT STEMS
1 cup onion, chopped finely
6-8 sprigs mint (leaves only)
1/2 – 1 t sea salt
1/2 cup lemon juice (about 2 lemons)
zest of 1 lemon
1/2 t cayenne or to taste (optional)
DIRECTIONS
Just mix all together and adjust salt to taste. Refrigerate and let flavors meld for a few hours. It’s better when the flavor have a chance to meld.
If you want to you can add 1/4 cup dry bulgur (soaked = 1/2 cup) and 1/2 cup olive oil.
It was a lot of chopping and yes, you can make it in a food processor but you have to be really careful not to over grind and make it a puree. NOT the texture you’re going for here!
