1/2 c. oatmeal
3 egg whites
1 scoop vanilla protein powder
1/4 c. non fat cottage cheese
1 tsp baking soda
1 tsp vanilla extract
1 packet Stevia
1/2 apple – diced into small pieces
1 tsp flaxseed
1 tbsp cinnamon
Spray muffin tin with non stick cooking spray.  Pre heat oven to 425.  Mix all ingredients together, except sliced apple.  Mix well and then fold in apple pieces.  Pour into muffin tin and bake for 10-15 minutes, until golden brown on top.  Enjoy!
