1 15 oz can black beans
1/2 can garbanzo beans
1/2 can kidney beans
1 lime, cut into wedges
1 red chili chopped
24 cherry tomatoes, cut in half
1 bunch of mint, rinsed and cut into pieces
1/4 c. scallions, chopped
1 large Fuji or Pink Lady apple, cut into small squares
1 tbsp Olive oil
Rinse beans and place in large mixing bowl. Squeeze lemon and lime onto beans. You can even cut the skin of the lime and lemon and toss into the mixing bowl with the beans. Add remaining ingredients slightly toss and serve. Delicious as your source of protein or as a bean salsa for fish or chicken or even as a side dish or on top of a salad! 🙂
