Ingredients:
6 egg whites, beaten until fluffy
1/2 c. low or non fat cottage cheese
1 scoop whey protein (flavor of choice)
1/2 cup uncooked oatmeal
1/2 c. wheat germ or flax meal
1 tsp baking powder
1 tbsp canola or flax oil
1/2 tsp cinnamon
PAM (cooking spray)

Place all ingredients except beaten egg whites in a food processor and pulse or blend intil mixture is completely mixed.

Pour blended ingredients into a bowl and fold egg whites into the mixture

Prepare a griddle with cooking spray. Ladle pancake mixture onto griddle and cook until both sides are browned.

Enjoy with sugar free syrup or even a touch of peanut butter!
