Ingredients:
One 15-oz. can pure pumpkin
1 1/4 cups oat flour (ground up oatmeal)
1/4 cup ground flaxseeds
1/2 cup egg whites
1/2 cup Splenda No Calorie Sweetener (granulated)
1/4 cup walnuts, chopped
2 tsp. baking powder
2 tbsp cinnamon
1 tbsp vanilla extract
1 tbsp pumpkin pie spice
Directions:
Preheat oven to 350 degrees.
In a large bowl, combine ground flax seeds and oat flour , Splenda, baking powder, cinnamon, and pumpkin pie spice.
In a medium bowl, mix together pumpkin, egg whites, and vanilla extract. Add this mixture to the bowl with the dry ingredients, and stir until just blended.
Slowly sprinkle chopped walnuts into the batter.
Spoon batter into a large loaf pan, sprayed with nonstick spray. Bake for about 50 minutes, until the top of the loaf is firm to the touch. Allow to cool and Enjoy!
You can use a nut butter to top it off or simply spray spray butter!
