Roasted Tomatoes and Onions

INGREDIENTS:

12 plum tomatoes
1 large onion (purple or yellow), sliced
1 tablespoon olive oil, plus a little extra
1 bay leaf
2 sprigs fresh oregano
freshly ground black pepper
1 tablespoon balsamic vinegar
1 tbsp fresh minced garlic

COOKING INSTRUCTIONS:

1. Preheat the oven to 300°F.
2. Toss the whole tomatoes and sliced onions with 1 tablespoon of olive oil, pinch or pepper and garlic spread on a baking sheet.
3. Roast them on the top rack of the oven until they are very soft and their juices are bubbling, about an hour.
4. Remove from the oven and add the bay leaf and oregano. Season with  pepper and sprinkle with left over olive oil and balsamic vinegar.
5. Return back to oven and place on broil and broil for about 5 minutes or until golden brown on the top.
GOES GREAT WITH ANY LEAN PROTEIN!!
