INGREDIENTS:
-2 Med yams, peeled and cubed
-1 tbsp EVOO
-1 tsp pepper
-1 tsp tumeric
-2 tbsp oat flour
-2 tbsp sesame oil
DIRECTIONS:
-Boil or steam the yams until cooked through, then mash with a fork.
-Combine yams, EVOO, pepper, tumeric and oat flour.
-Use your hands to make into fritters (round mini pancake shape). Add Sesame oil to pan and fry in skillet, flipping occasionally, until cooked and golden brown on outsides.
