INGREDIENTS:
-7 egg whites
-1/2 cup Cooked Broccoli
-1/4 cup fresh cilantro
-3 whole garlic cloves
-1 tsp red pepper (cayenne pepper)
-2 tbsp salsa
-1/4 avocado, sliced
-1 roma tomato, diced
DIRECTIONS:
1. Spray mini pancake pan with non stick cooking spray. Turn on stove and allow to warm while moving on to step 2.
2. Place cooked broccoli, egg whites, cilantro, garlic and red pepper into blender. Blend until fully mixed, about 20-25 seconds.
3. Pour mixture into mini pancake pan and allow to cook on both sides.
4. Once fully golden brown on both sides, remove from pan.
5. Add salsa over top and garnish with diced tomato and sliced avocado.
